材料:

蓮藕1節、油條1根、青椒1/2個、甜紅椒1/2個、鳳梨1個、草菇數粒。

調味料:

糖醋汁:鳳梨原汁1杯、蕃茄醬3大匙、白醋2大匙,糖1大匙、太白粉2茶匙、鹽1/4匙。

炸麵糊:太白粉2大匙、麵粉1杯、水1杯、油1大匙、泡打粉1/4小匙。 

作法:

1.
鳳梨切塊壓汁備用。

2.
油條切長條撥開。

3.
蓮藕切成長條塞入油條內。

4.
青椒,甜紅椒切片備用。

5.
甜椒及草菇入鍋川燙。

6.
將油條蓮藕沾麵糊炸酥成素排骨。

7.
熱鍋加入少許油拌炒川燙好的菜料。

8.
加入糖醋醬、素排、剩下的鳳梨拌炒。

9.
太白粉加水芶芡,入鍋稍煮即可盛盤。

材料:

 細砂糖 80g、低筋麵粉 40g、無鹽奶油 40g、玉米粉 10g、全蛋 50g、杏仁片 150g、蛋白 40g

作法:

 1. 無鹽奶油與細砂糖隔水加熱融化。

 2. 1 項完全融化後離開熱水,加入全蛋、蛋白,攪拌均勻

 3. 將麵粉、玉米粉過篩後,倒入 2 中拌勻,再加入杏仁片。

 4. 調勻的 3 倒入抹油的烤盤,用叉子將麵糊表面抺平,越薄越好。

 5. 將 4 放入已預熱之烤箱中層,170度烤約10分鐘成金黃色。

 備註


麵糊倒入烤盤時直徑不要超過 6 cm ,面積太大,烘烤時間太久,餅乾的邊邊會容易烤焦或上色不均。



食譜的砂糖原本是 80g,之後成品身邊的人普遍都說太甜,調整成 60g 會比較好(僅供參考^^,喜歡甜的人可以用80g的...)。喜歡杏仁或餅乾多ㄧ點的,在 100g ~ 150g 間調整杏仁片的量即可。

材料:


蛋白40g、細砂糖40g、鹽0.5g、麥芽糖10g、水10g、低筋麵粉15g、杏仁片120g


作法:


1. 將蛋白、細砂糖、鹽一起攪拌均勻至糖散。


2. 麥芽糖及水先一起溶解(可用微波爐將兩者溶解)後加入1項中拌勻。


3. 加入低筋麵粉拌均勻。再加入杏仁片攪拌均勻後放入冰箱冷藏半小時至一小時。


4. 烤盤上鋪一張烤盤布,將3項自冰箱取出,分好大小後,以叉子或湯匙背面攤開成圓形並注意儘量不要有兩片重疊。


5. 放入烤箱以130度烤至20分鐘後,將溫度增加至約160度烤至杏仁瓦片表面呈黃褐色。


6.自烤盤布上取下杏仁瓦片,如果覺得底部仍黏黏,可翻面讓底部朝上再烤數分鐘。


:鋪烤盤布烘烤後較容易取下杏仁瓦片,而且烤盤布可清洗後晾乾重覆使用。 (也可以用烤盤紙或者鋁箔紙取代)


備註:


放進烤盤時記得要注意間距,不然會全部通通黏在一起>"<


我就黏過....到最後變成杏仁脆片...因為都碎成小塊了...


杏仁瓦片是需要熟能生巧的東西,雖然做法簡單,但是真的要做到好吃要下很多工夫的。


真的要做到好吃到上的了檯面,是要慢慢的一次次研究的哦^^

中國風味生魚片

     2分之1(儘可能切碎)

麻油  2小匙

醬油  3大匙

辣椒  1(切碎,或是準備些許辣椒粉)

芥末  2分之1小匙

香菜  量跟蔥差不多

花生  3(盡可能敲碎)



把以上的東西混在一起,再和自己喜歡的生魚片(2人份)攪拌。(白肉魚比較適合)

依個人口味,可多添加醬油。

還可以用萵苣包起來吃。

懶人電鍋泡菜拉麵


 


材料


愛之味韓式泡菜半罐.康寶排骨湯塊一塊.快煮拉麵一塊.雞蛋一顆


作法


3人份小電鍋內鍋加水約5~6分滿.外鍋量米杯水半杯以上,加入湯塊及泡菜(含汁)開始煮,外鍋水滾了之後加入麵塊,麵軟硬適中時可打入蛋花,完成!


配菜:簡易馬鈴薯沙拉


 


材料


馬鈴薯一顆,雞蛋一顆,桂冠沙拉醬.胡椒鹽適量


做法


1.馬鈴薯切片放置盤上,生雞蛋用鋁箔紙包住,放入電鍋蒸盤上,外鍋加兩杯水


2.電鍋跳起後,將馬鈴薯取出,壓成泥,雞蛋弄碎,加入適量沙拉醬跟胡椒鹽和勻即可

鹹稀飯

材料:1杯、排骨半斤、香菇3朵、芋頭1/3個、紅蘿蔔少許、芹菜末或蔥花少許、水8

調味料:鹽1大匙、胡椒粉適量

作法:

1.將米與排骨洗淨,紅蘿蔔、香菇、芋頭切大丁。

2.所有材料放入大同電鍋內鍋,外鍋放1杯水,煮至開關跳起後再悶5分鐘,加入調味料即可。

洋蔥鮪魚稀飯(1人份)

材料:鮪魚罐頭半罐、洋蔥半個、康寶雞湯塊半塊

做法:

1.半杯米加上二杯水放內鍋(我喜歡比較水的稀飯,可以按自己喜好斟酌水量)

2.把瀝乾油的鮪魚半罐,切碎的洋蔥半個及半個雞湯塊丟進內鍋.

3.外鍋放4/5杯水按下開關.大約15分鐘後可吃.

皮蛋瘦肉粥(1人份)

材料:米半杯、水4杯、皮蛋2顆、蔥花少許、雞湯塊1塊、油條1根、雞蛋1顆、豬肉絲

做法:

1.先把皮蛋切碎.油條撕成小段約3公分左右,豬肉切絲備用

2.米洗好後加水跟雞湯塊.放入電鍋煮(外鍋放2/3杯的水)如果有冰箱的話也可以把米跟水冰成冰塊米這樣米很容易開花不會成顆粒狀這樣比較好吃 (平常用瓦斯爐煮的話最好不要這樣做,因為很容易煮成米糊...)

3接著電鍋內的白米煮成粥後在放1/3杯的水在外鍋煮一次...煮的時候加入豬肉絲攪一攪....發現肉絲變白色之後加入蛋液攪一攪...蓋上鍋蓋

4煮好後加入皮蛋.蔥花拌一拌...灑上油條後就很美味了 


蛤蠣鮮粥



材料:蛤蠣6兩,米半杯,清水3碗,青蔥1枝,薑2

調味料:鹽、味精各1小匙,香油、米酒、黑胡椒各少許

作法:

1.蛤蠣吐沙後洗淨備用  

2.米洗淨後放入電鍋內鍋將蛤蠣均勻分開放入 加入清水3

3.將薑片及鹽味精一起放入內鍋中外鍋加水1杯半煮至開關跳起

4.裝入容器後淋上米酒香油及黑胡椒粉 蔥切成蔥珠撒上即可

有時候回家連動都不想動了...

外面的東西又貴又油又難吃...

我們這些窮死人的學生又怎麼有摳摳呢...

這時候呢...就要拿出~~萬能的大同電鍋!!




感謝米娃娃的集思廣益...

使用的是大同電鍋...




山藥排骨湯

材料有紅蘿蔔+山藥+排骨+香菜少許




 


 紅蘿蔔.山藥切滾刀塊...山藥要切大塊一點..不然煮好後山要會爛掉無法成塊狀


排骨先燙過...之後紅蘿蔔+山藥+排骨+生水放入鍋中...外鍋加3/4量米杯的水...


好了之後加香菜..味精即可

香菇雞湯()




乾香菇用熱開水先燙過(1分鐘即可)水倒掉...因為要清除表面的雜質跟氣味...


之後再用熱開水泡乾香菇約(1小時)2次泡過香菇的水不能倒掉喔..刴塊過的雞腿


肉先燙過..不要燙到熟喔..保持裡面還嫩嫩的.....雞腿肉+香菇+香菇水+老薑片少許+生水....放入電鍋中煮熟..煮好後加鹽少許味精...最重要就是酒...依照個人喜好斟酌酒的量即可

香菇雞湯()




 


材料:


切好的土雞腿  大約4


蔭瓜罐頭*1


乾香菇數朵(先泡10分鐘)


老薑兩三片(這可有可無)


作法:


1.將土雞腿先燙過,然後撈起


2.電鍋內鍋放土雞腿、蔭瓜罐頭一整罐、乾香菇、老薑片,然後外鍋大約放一杯的水,等電鍋跳起來就好啦 



蛤蜊排骨湯
 


材料:蛤蜊半斤、排骨半斤、薑絲適量


調味料:


(1)1/4杯、鹽2小匙、糖1/3大匙、香油適量


(2)6~8


作法:


1.排骨先用熱水川燙去血水後撈起洗淨後瀝乾。


2.(2)水煮沸騰放入排骨、蛤蜊、薑絲及調味料(1)等一起放入容器(內鍋)加蓋放入電鍋中,外鍋放入1/2杯水,加外蓋後,壓下煮食開關即可。

之前去男朋友家當見習時奶奶牙齒掉光了所以不能吃硬的東西

外面的廣東粥配料通常又不太好咀嚼

今天要做的,就是簡單好吃又好消化的皮蛋瘦肉粥哦!!

材料:瘦肉1塊(豬腱肉最好),皮蛋2個(無鉛皮蛋,一來健康,二來石灰味沒那麼重),薑1塊,米足量,水足量(一杯米要放5~6杯水去熬哦),油鹽適量

要煮出一鍋綿香好吃的皮蛋鹹瘦肉粥,要訣如下:

1挑米:煮粥用的米最好用圓圓短短的珍珠米,煮出的粥特別綿軟,台灣這裡不太容易買到,我都到米店買香米煮出來會很香,但是價錢比較高就是。普通的米當然也是很好吃的哦

2、煮粥的米要預先泡:約半碗米淘洗乾淨後,要用2湯匙的油、1個半茶匙的鹽和少許水(2茶匙)拌勻,泡至少半小時,放心,雖然用了很多油,但是油會在煮粥的過程中揮發,令米綿爛,所以並不油膩的。如果不要用油也可以那麼就是用水泡半小時就可以了。這裡用油的目的是讓他煮好之後可以比較軟綿,老人家比較好吃,也比較不礙胃。

3、煮粥的肉要先用沸水煮煮去腥(通常食譜會說什麼川燙去腥講的很複雜),煮粥用瘦肉,不必太考究是豬的哪一塊肉,總之要保持一整塊肉塊不要切開(我一般用大約巴掌大,12mm厚一塊豬肉,如果條件許可,用豬腱肉更好吃;切這樣是因為等等要拔成絲,老人家方便吃,通常我會偷懶沏成肉末,更偷懶的方法是豬肉店買絞肉XD)。如果用瘦肉煮粥,那麼要先用沸水把瘦肉稍為煮一下,然後洗淨。水要煮沸,才放材料,不然會弄得很硬不好吃。先放肉塊、薑片,火不要關小,肉塊到了沸水中,外面的部分遇熱而熟硬,封住了裡面的肉汁,這樣肉煮完粥後也不難吃,也不會太硬太老,然後等水再次沸騰時放泡好的米和一個切碎的皮蛋,而這第一個皮蛋切碎下粥與米同煮,皮蛋會融化,融入粥的味道中。(如果怕粥的顏色太噁心就不要這時候放皮蛋了…)

 5、先大火,後小火,火候要足:水滾了,下了材料後,先大火煮20分鐘,然後再轉小火煮1個半小時,火候足,粥就綿軟入味而且容易消化;

 6、粥的質感處理:在轉小火煮了1個半小時後,把第二個皮蛋也切碎,同時把煮在粥中的瘦肉撈出來,用筷子扒拉,撕成絲絲狀(這是為了老人家方便吃…),跟第二個皮蛋一起放回粥中,同煮最後半小時,然後關火。第二個皮蛋在關火前半小時加入粥中,半小時可將第二個皮蛋煮得既沒石灰味,同時又變軟滑,吃粥時也能吃到有皮蛋,而肉因為是水沸時下的,還保持了一定鮮味,撕成絲後放回粥中,特別好吃,而且也很好咀嚼。

 這樣煮出來的粥不必下鹽(重口味的人可能要加一點不過老人家應該不適合吃重鹹吧…),好吃,而且降火助消化。如果粥有點黏底,千萬不要用勺子拔拉鍋底的那層米皮,不然粥會糊的很噁心,我們通常會放一個輕的小調羹(要用鐵的...陶瓷的有裂開的危險...)在鍋底與粥同煮,水沸騰過程中,小調羹也被帶動,可以防止粥煮粘底。

我家的小烤箱,是之前買化妝品送的滿額禮感覺還蠻燙的…>”<


今天要做的是東方式烤箱料理


烤香腸

作法:香腸(如果是傳統市場買的要沖一下水去灰塵),放好舖好鋁箔紙的烤盤上,入烤箱烤約10~15分鐘(一般來說是指針轉一圈),即可取出切薄片食用。



蛤鹽燒


材料:大蛤蜊8

調味料:酒、鹽各少許

作法:大蛤蜊洗淨,噴上少許酒,灑上鹽,入烤箱中烤約15~20分鐘,至蛤蜊微開時即可。

※最好在蛤蜊下面用鋁箔紙分別作成一個個的小杯子,才不會把湯汁浪費掉。



烤小卷


材料:小卷一條。

調味:酒、烤肉醬各適量。

作法:

1. 小卷洗淨,在正面上切刀口,塗上一層酒。

2. 烤盤舖上鋁箔紙,上置小卷,刷上一層烤肉醬,入烤箱中烤5~10分鐘後,取出再塗上一層烤肉醬,續烤3~6分鐘,再塗一層烤肉醬,拿出來看看熟了就可以了。



烤白帶魚


材料:大白帶魚中段二段。

調味:酒、鹽各少許。

作法:

1. 白帶魚洗淨,用刀在魚身上橫切條狀,醃上少許酒,抹上鹽巴,醃二十分鐘備用。

2. 烤盤舖上鋁箔紙塗上一層油,放入醃好的白帶魚,入烤箱烤10~15分鐘左右即可。



1. 白帶魚醃酒可去腥。

2. 鋁箔紙塗油,以防魚與鋁箔紙沾黏。



烤雞腿

材料:雞腿二支。

調味:醬油、糖、五香粉少許。

作法:

1. 雞腿洗淨,用調味料醃二小時。

2. 烤盤舖上鋁箔紙,塗上一層油,放入雞腿入烤箱中,烤約30分鐘左右。



烤明蝦


材料:明蝦或大草蝦6

調味:酒、烤肉醬各適量。

作法:

1. 明蝦洗淨,抽去腸泥,用酒浸泡十分鐘。

2. 烤盤舖上鋁箔紙,放入明蝦,塗上烤肉醬,入烤箱烤8~15分鐘左右即可。



烤鰻魚

材料:鰻魚一條

調味:醬油、糖、白芝麻。

作法:

1. 鰻魚洗淨切頭尾,用醬油、糖醃至入味(3min)

材料:低筋麵粉90克、巧克力醬、砂糖40克、雞蛋半個、奶油70克



做法:將麵粉、砂糖、奶油、雞蛋攪拌均勻,將一半的生料加入巧克力醬,同樣也要攪拌均勻,這樣就有了黃色與褐色,兩種不同顏色的生料,將生料調整成長條狀,依序放在保險膜中,將兩色生料用保鮮膜捲成一條,讓兩種顏色相互交錯,形成出美麗的線條,做出獨一無二的花紋麵糰,再利用厚紙板來為麵糰雕塑形狀,之後放入冰箱冷凍約30分鐘,把麵糰切成0.5公分的薄片,放入烤箱烘烤15分鐘即可。

※根據經驗,我是用100度烤20分鐘讓她慢慢熟透的...不然形狀會散掉...

速食味噌湯

1.
煎黑芝麻。(大約一大湯匙)

2.
煎大約10隻小魚乾。摘掉頭部跟內臟,可以提升味道的品質。

用果汁機將12打碎。

3.
之後把蔥(10公分長)切碎。

4.
把所有材料跟5~6大匙的味噌攪拌,如果有陳皮就放入半小匙。

(
陳皮:橘子皮晒乾後切成片的東西。)

做好後挖一大匙放在容器裡,加入熱水就是一杯可口美味的味噌湯了。剩下的裝入密封容器,放入冰箱內,可保存一個禮拜。

墨魚哇沙米

醬油  3大匙

哇沙米      1小匙

麻油  1小匙

青紫蘇      2(盡可能切碎)

洋蔥  4分之1(切片放入水中泡一下再擠乾)

檸檬汁      1小匙



把以上東西混在一起,再和墨魚生魚片(2人份)攪拌。

這道菜也可以依個人口味,添加檸檬汁與醬油。

白酒薑果凍

(2
人份)

白酒  2

蜂蜜或是果糖     依個人口味酌量

薑汁  2分之1小匙



1.
把以上材料好好攪拌,倒入容器裡,放進冷凍庫凝固。

2.
凝固後拿出來,放入果汁機中攪拌。

3.
再倒入容器中,放進冷凍庫凝固。(花費這些功夫可以讓口感更好。)

4.
裝入杯中,用檸檬薄片與薄荷葉作裝飾。(也可以不放。)
